Amaranth
Chinese spinach, Yin choi
Unlike most varieties of Amaranth, which are harvested for their grain, this variety is cultivated for its leaves. Leaves are large and teardrop-shaped, light green on the outer edges and a striking magenta in the center.

Thinning technique
After you've transplanted your seedlings to the grow shelf. Each pod should be thinned to 1 - 2 seedlings. To do this pull out the excess seedlings using a pair of tweezers or your fingers gently.
Harvesting technique
Harvest in one of two ways.
Harvest the larger, lower leaves at the base of each leaf stem.
Harvest the main stalk at a leaf node. A leaf node is where a secondary stalk emerges from between the “V” of a smaller stalk and the main stalk.
